Instructions
- Preheat the oven to 170°C (fan) and line a 1lb loaf tin with baking parchment.
- In a large bowl, mix together flour, baking soda, and salt. Set aside.
- In a separate large bowl, using a whisk, mix together the melted butter with both sugars until well combined. Add mashed bananas, eggs, yogurt, and vanilla extract. Stir to combine all the ingredients thoroughly.
- Add the dry ingredients (flour, baking soda, and salt) to the wet mixture and fold gently with a spatula until just combined. Be careful not to over-mix. Fold in the chocolate chips until evenly distributed (you can reserve about 1 tablespoon of chocolate chips to sprinkle on top of the bread if desired).
- Pour the batter into the prepared loaf tin (sprinkle reserved chocolate chips on top if using) and bake in the oven for about an hour, or until a skewer inserted in the middle comes out with just a few moist crumbs attached. Let it cool completely in the pan before removing and slicing.
