Ingredients

  • 100 g quinoa
  • 1 teaspoon vegetable stock powder (or 1 cube of vegetable stock)
  • 10 g cashew nuts
  • 1 tablespoon coconut oil
  • 2 medium carrots (peeled and cut into long, thin slices)
  • ½ small white or red onion (finely sliced)
  • 100 g red cabbage (finely chopped)
  • 100 g savoy cabbage (roughly shredded)
  • 1 small handful pomegranate seeds (optional)
  • 1 mild red chilli (finely chopped)

For the sauce:

  • 3 cm piece of ginger (peeled and finely grated)
  • 1 large clove of garlic (crushed)
  • 1 tablespoon lime juice
  • 1 tablespoon maple syrup
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil

Instructions

  • Rinse your quinoa thoroughly under cold water using a fine-mesh sieve. This step is crucial to remove saponins, which can give quinoa a bitter taste. Place the rinsed quinoa in a saucepan, add the vegetable stock powder and 200 ml of cold water. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the saucepan with a tight-fitting lid, and simmer gently for about 15 minutes. Cook until all the liquid has been absorbed and the quinoa grains appear fluffy with a characteristic ‘ring’ around them, indicating they are perfectly cooked.
  • Once cooked, transfer the quinoa to a wide plate or baking sheet. Using a fork, gently fluff the grains to separate them and allow them to cool completely. Cooling the quinoa helps prevent it from becoming mushy when mixed with the other ingredients in the stir fry.
  • Heat a wok or large frying pan over a medium heat. Add the cashew nuts and dry fry them for 2-3 minutes, stirring occasionally, until they turn a light golden brown and become fragrant. Be careful not to burn them. Remove the toasted cashews from the pan and let them cool slightly. Once cool enough to handle, roughly chop them and set aside. These will add a wonderful crunch to your stir fry.
  • Return the wok to high heat and add the coconut oil. Once the oil is shimmering, add the thinly sliced carrots and stir-fry for 1 minute. The high heat ensures they retain their crispness. Next, add the finely sliced onion and cook for another minute, stirring continuously. Finally, incorporate the roughly shredded savoy cabbage, finely chopped red cabbage, and the mild red chili. Continue to stir-fry for just one more minute. The goal is for the vegetables to be tender-crisp, not soft.

To make the sauce and combine:

  • In a small bowl, combine all the sauce ingredients: grated ginger, crushed garlic, lime juice, maple syrup, soy sauce, and sesame oil. Whisk them vigorously until they are thoroughly combined and emulsified. Pour this vibrant sauce over the stir-fried vegetables in the wok, mixing well to ensure all the vegetables are coated. Immediately add the cooled quinoa to the pan. Toss everything together thoroughly, ensuring the quinoa is evenly coated with the sauce and mixed with the vegetables. Cook for a final 1-2 minutes, just long enough to heat the quinoa through without overcooking the vegetables. Serve the stir fry immediately, generously scattering the toasted and chopped cashews over the top. For an extra touch of sweetness and color, garnish with pomegranate seeds, if using.
