Bergamot Mojito Granita
Ingredients
- 300 g golden caster sugar
- 30 fresh mint leaves (plus extra for garnish)
- 6 medium limes (juiced)
- 2 medium bergamots (juice and zest)
- 2 large Sorrento lemons (juiced)
- 150 ml golden rum
Instructions
- In a medium saucepan, combine the golden caster sugar with 1 litre of water. Bring the mixture to a boil, stirring constantly until the sugar completely dissolves, creating a simple syrup. Remove from heat and allow it to cool down to room temperature. This step is crucial for ensuring the sugar integrates smoothly into your granita.
- In a food processor or high-speed blender, combine the fresh mint leaves, the juice from the limes, the zest and juice from the bergamots, and the juice from the Sorrento lemons. Pour in the cooled sugar syrup. Blend all ingredients until thoroughly combined and the mint is finely chopped. Transfer this vibrant liquid into a shallow plastic freezer-safe container. Place in the freezer, stirring with a fork every 30 minutes to break up ice crystals, until it reaches a beautiful, slushy granita consistency. This usually takes about 3-4 hours.
- Once the granita is ready, scoop it generously into chilled glasses. Pour 25ml of golden rum over each serving (or adjust to your preference). Garnish each Bergamot Mojito Granita with a slice of lime, a strip of lemon peel, and a fresh sprig of mint. To achieve a striking, vibrant green color, especially for themed events like St. Patrick’s Day, incorporate a tiny pinch of spirulina powder or a few drops of green food dye into the mixture before blending and freezing. Spirulina is an excellent natural option that will not alter the taste.
If authentic Sorrento lemons are unavailable, you can confidently substitute them with regular large, juicy lemons. While Sorrento lemons offer a unique intense aroma, standard lemons will still yield a delicious and refreshing mojito.
For an extra chill and less dilution, serve your Bergamot Mojito Granita in pre-chilled glasses or even frosted mugs.
