Caramel Mocha Chocolates (Vegan)
Ingredients
- 50 g white chocolate (dairy- free if vegan)
- 200 g dark chocolate
- 1 tablespoon Kahlua
For the filling:
- 5 medjool dates (pitted and chopped)
- ½ teaspoon sea salt
- 2 tablespoon coconut oil (melted and cooled)
- 1 tablespoon maple syrup
- few whole hazelnuts (optional)
Instructions
- Melt white and dark chocolate in separate bowls over saucepans with simmering water (double boiler method). Gently stir until smooth. Set aside and allow to cool slightly.
- Once the dark chocolate has cooled a little, mix it thoroughly with the Kahlua (or coffee extract). Using a toothpick or a small spoon, carefully scatter drops or swirls of the melted white chocolate into your chosen chocolate molds. This creates a beautiful marbled effect. Place the molds in the fridge for approximately 2 minutes to set the white chocolate.
- Add roughly a teaspoon of the dark chocolate mixture into each chocolate mold, creating the outer shell. Gently tilt and rotate the chocolate mold after each addition to ensure the sides are fully coated with chocolate, forming a cup. Freeze for 5-10 minutes until firm.
- While the chocolate shells are setting, prepare the rich date filling. In a blender or food processor, combine the pitted and chopped dates, melted and cooled coconut oil, maple syrup, and a pinch of sea salt. Blend until you achieve a thick, smooth, and creamy paste.
- Carefully add approximately ¾ teaspoon of the date paste into each chocolate mold, filling the chocolate cups (reduce to ½ teaspoon if you are adding whole hazelnuts). If using hazelnuts, gently press one into the center of the date paste. Then, top up the molds with the remaining dark chocolate mixture, ensuring the filling is completely covered. Freeze for a minimum of 40 minutes, or until fully solid. Once set, gently unmold your beautiful caramel mocha chocolates and store them in an airtight container in the refrigerator until ready to enjoy!
Please note that all my recipes are developed and tested in metric grams. I recommend that you use digital scales for more accurate results. I have provided a conversion to US customary in the recipe but please note that I haven’t tested using this method.
