Thai Style Pea and Apple Soup
Ingredients
- 500 g frozen peas
- 2 medium Granny Smith apples
- 2 tablespoon green curry paste
- 1 l vegetable stock
- 1 medium red chilli finely chopped
- 1 small bunch of fresh coriander leaves finely chopped
- 140 g rice noodles (2 nests) cooked
Instructions
- Peel and core the apples, then dice them into small pieces.
- Place the diced apples, frozen peas, and green curry paste in a medium pan over medium heat. Sauté for a couple of minutes until the mixture becomes wonderfully aromatic, allowing the flavors to meld.
- Add the vegetable stock to the pan and bring the mixture to a boil. Once boiling, reduce the heat and simmer gently until the apples are tender but still hold their shape. Remove the pan from the heat and use a stick blender to blend the soup until it achieves a smooth and creamy consistency.
