Ingredients

  • 2-3 fresh figs per person (choose ripe, soft figs)
  • â…“ cup walnut pieces, lightly toasted for enhanced flavor
  • 2 tablespoons agave nectar (or maple syrup, to taste)
  • slices of high-quality vegan mozzarella cheese (optional, but highly recommended)
  • a small bunch of fresh thyme, for baking and garnish
  • Pinch of sea salt and freshly cracked black pepper
  • A little lemon zest, for brightness (optional)

Instructions

  • Preheat your oven to 180°C (350°F) and prepare a baking tray by lining it with baking paper for easy cleanup.
  • Carefully halve each fig from top to bottom. Arrange the halved figs, cut-side up, on the prepared baking tray, ensuring they are not overcrowded.
  • Evenly scatter the walnut pieces and fresh thyme sprigs over the figs. Drizzle generously with agave nectar, ensuring each fig gets a touch of sweetness.
  • Bake in the preheated oven for approximately 5-10 minutes. Keep a close eye on them; the figs should deepen in color and soften, and the walnuts should achieve a lovely golden toast. Baking time may vary depending on fig ripeness and oven.
  • Once baked, gently transfer the warm figs onto individual plates. If using, top each fig half with a couple of slices of vegan mozzarella. For an added layer of brightness, grate a little fresh lemon zest over the top. Season lightly with a pinch of sea salt and a grind of fresh black pepper. Garnish with a bit more fresh thyme and a final delicate drizzle of agave nectar.
