Ingredients

For the Salad

  • 2 ripe avocados (peeled and sliced)
  • 4 medium clementines (peeled and sliced horizontally)
  • 120 g pomegranate seeds
  • 80 g pine nuts
  • 130 g rocket

For the Dressing

  • 1 tablespoon caraway seeds
  • 4 medium clementines (zest and juice only)
  • 1 tablespoon fresh parsley
  • 100 ml extra virgin olive oil

Instructions

  1. In a large bowl, gently mix all the salad ingredients together.

To make dressing:

  1. Place the caraway seeds in a small, dry frying pan over medium heat and toast them for a couple of minutes until fragrant.
  2. Using a pestle and mortar, gently crush the seeds. Return them to the pan with the clementine juice and zest, then simmer for a couple more minutes. Set aside and allow to cool.
  3. Add fresh parsley to the cooled mixture and gently whisk in the extra virgin olive oil. Season with salt and pepper to taste, if needed.
  4. Pour the dressing over the prepared salad and serve immediately. Enjoy!
