Ingredients
- 1 tablespoon vegetable oil
- 1 small onion, chopped
- 1 large sweet potato, cut into chunks
- 1 large parsnip
- 500 g roasted pumpkin
- 1 L vegetable stock
- ½ teaspoon cinnamon
- ½ teaspoon turmeric
- ¼ teaspoon cayenne pepper
- ½ pack fresh thyme (leaves picked)
- 3 tablespoon pumpkin seeds (toasted)
- maple syrup for drizzling (optional)
Instructions
- In a large, heavy-bottomed pan, heat the oil and add onion with a pinch of salt. Cook on a low heat for a few minutes, until soft.
- Add roasted pumpkin, sweet potato, parsnip, vegetable stock, cinnamon, turmeric, cayenne pepper, and thyme.
- Simmer for about 40 minutes or until all vegetables are soft. Remove from heat.
- Set aside some of the liquid. Blend the remaining vegetables and liquid until smooth and velvety, gradually adding the reserved liquid back into the pan bit by bit until your desired consistency is reached (add more liquid if you prefer a thinner soup).
