Vegetable Spring Rolls
- 8 rice paper wrappers
- 1 large avocado (peeled, thinly sliced)
- 2 cups fresh vegetables (cucumber, lettuce, peppers, red cabbage) cut into sticks/ batons

- Blend all the ingredients together until smooth, except for the coriander.
