  • 230 ml cashew milk (or other plant-based milk of choice)
  • 100 g dark chocolate (min 70% cocoa solids), melted and cooled
  • 1 teaspoon vanilla extract
  • 250 g all-purpose flour
  • 50 g cocoa powder
  • 1 ½ teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt

For the Peanut Butter Frosting:

  • 250 g smooth peanut butter, room temperature
  • 115 g vegan spread (e.g., vegan butter or margarine)
  • 250 g icing sugar (powdered sugar)
  • 2 tablespoon cashew milk (or other plant-based milk)

Instructions

  1. Preheat the oven to 180°C (350°F) fan. Line an 8-inch square tin (or 7-inch for taller brownies) with baking parchment, leaving some excess to overhang on the sides to assist with easy removal.
  2. In a large bowl, combine the soft light brown sugar and the melted and cooled coconut oil. Mix well until smooth.
  3. Add the cashew milk, apple cider vinegar, melted and cooled dark chocolate, and vanilla extract to the wet mixture. Stir thoroughly until all wet ingredients are well combined.
  4. In a separate medium bowl, whisk together the dry ingredients: all-purpose flour, cocoa powder, baking powder, baking soda, and salt.
  5. Gradually fold the dry ingredients into the wet ingredients, mixing until just combined. Be careful not to overmix the batter.
  6. Pour the brownie batter into the prepared baking tin and spread it evenly.
  7. Place the tin in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs (not wet batter). The top should have a shiny, papery crust, and the sides should just begin to pull away from the tin.
