Ingredients

  • 256 g wholemeal flour
  • 2 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon (optional)
  • 120 ml maple syrup
  • 125 g almond yogurt (or other plant-based yogurt)
  • 250 ml almond milk (or any plant-based milk)
  • 1 teaspoon vanilla bean paste (or vanilla extract)
  • 100 g dark chocolate (min 70% cocoa solids) melted, for glaze

Instructions

  1. Pre-heat your oven to 180°C (350°F) for fan-assisted ovens. Lightly spray or oil your doughnut molds/tins and set them aside.
  2. In a large bowl, combine the wholemeal flour, baking powder, cinnamon (if using), and salt. In a separate, smaller bowl, mix together the maple syrup, almond yogurt, almond milk, and vanilla bean paste. Add the wet ingredients to the dry ingredients and stir until just combined; do not overmix.
  3. Transfer the doughnut batter into a piping bag (or a zip-top bag with the corner snipped off) and pipe it evenly into the prepared molds/tins. Place them in the pre-heated oven and bake for 15 minutes, or until golden and a skewer inserted comes out clean. Remove from the oven and allow to cool in the molds for about 10 minutes.
  4. While the doughnuts are cooling, melt the dark chocolate using a microwave or a double boiler. Once cooled, gently remove the doughnuts from their molds and dip each one into the melted dark chocolate to create a smooth, glossy glaze.
