For vanilla cashew cream:

  • 130 g cashew nuts (soaked for about 3-4 hours or overnight)
  • 45 ml coconut oil (melted)
  • 3 tablespoon maple syrup
  • 1 teaspoon vanilla bean paste
  • 1 tablespoon lemon juice
  • 2-3 tablespoon almond milk (or any other dairy-free milk)

Instructions

To make crepes:

  • Place all the ingredients for the crepes (excluding sparkling water) into a medium bowl. Using an electric mixer or a whisk, blend them all together until you achieve a perfectly smooth batter. Stir in the sparkling water and mix gently once more. Transfer your crepe batter to the refrigerator and allow it to rest for at least one hour; ideally, two hours or even overnight for the best texture and consistency.
