Hello, wonderful readers! I hope you’re all refreshed and rejuvenated after the recent Easter holidays. I certainly am! My festive break took me on a delightful trip to Ireland, where I had the immense joy of becoming a godmother to a sweet baby girl. While my liver might still be silently protesting the celebratory spirits from that visit, my kitchen, thankfully, has recovered just fine, leading me to share an absolutely fantastic recipe with you today!

Today, I’m thrilled to introduce you to what I confidently believe is one of the tastiest, easiest, and most irresistible healthy snacks you’ll ever encounter: Chocolate and Peanut Butter Energy Bites. Imagine a delectable treat that requires absolutely no baking or cooking whatsoever. Just five simple ingredients, a quick mix, roll, and a little chill time in the fridge, and you’re all set. Sounds like a dream? It truly is! Let’s dive into how these magical morsels come to life.
I must confess, I was quite late to the energy bite trend, remaining an “energy bites virgin” until just last year. It was a dear friend from my office days who first introduced me to the concept. Around 4 PM daily, as the clock slowly ticked towards quitting time, you’d find me subtly hovering around her desk, my senses keen for any sign of her daily snack. Her shop-bought energy balls, from a well-known brand, were my gateway. From the very first bite, I was utterly hooked, instantly understanding their appeal for a quick energy boost.

A couple of days later, with the memory of that delightful bite still fresh, energy bites were at the very top of my weekly grocery list. However, my excitement quickly turned to a slight shock upon seeing the price tag. Each tiny bite was selling for a hefty £2.00! While £2.00 isn’t a fortune, the realization that I could probably create an entire batch of these delicious treats for the same price was a revelation. That moment sparked a culinary revolution in my kitchen: I vowed to start making my own energy bites. And I haven’t looked back since. This homemade version not only saves a significant amount of money but also ensures you know exactly what goes into your snack, free from preservatives or hidden additives.
The beauty of these chocolate peanut butter energy bites lies in their incredible simplicity. The ingredient list is refreshingly short and sweet, featuring just five core components. You’ll need some smooth peanut butter, rich cocoa powder, a touch of coconut flour (which, to be honest, I’ve struggled to successfully incorporate into any other recipe to this day!), pure maple syrup, and for an extra layer of gourmet flavor, a dash of vanilla bean paste. That’s it! Seriously, it’s that straightforward.
These no-bake energy bites are more than just a sweet treat; they are a truly versatile and beneficial snack perfect for a multitude of occasions. They excel as an ‘on-the-go’ option, providing a convenient and healthy alternative to processed snacks when you’re rushing out the door. Keep a ready stash in your fridge for those moments when you need a quick, natural burst of energy, perhaps between meetings, during a busy afternoon slump, or when you just need a little something to tide you over until your next meal without reaching for junk food. For active individuals, these bites are also an ideal pre or post-workout snack, offering both quick energy and essential protein for recovery. Their compact and robust nature makes them a fantastic companion for hiking trips, long walks, or any outdoor adventure where sustained energy is key. Their delicious flavor makes them a favorite among both adults and children, proving that healthy eating can be both easy and incredibly satisfying.
One of the many advantages of this recipe is its natural gluten-free status, thanks to the use of coconut flour. Beyond that, these bites are a powerhouse of nutrition, generously packed with protein and healthy fats derived from the peanut butter. If coconut flour isn’t readily available in your pantry, don’t fret! You can easily substitute it with desiccated coconut flakes. However, you’ll need to briefly pulse the flakes in a food processor or blender to achieve a finer consistency, similar to flour. Alternatively, almond flour or almond meal can also be used as a fantastic gluten-free replacement, offering a slightly different flavor profile but maintaining the desired texture and binding properties. The adaptability of this recipe ensures that everyone can enjoy these wholesome delights, even with slight ingredient adjustments.

Once prepared, these delightful energy bites will remain fresh and delicious for a couple of weeks when stored properly in an airtight container in the refrigerator. However, I must issue a friendly challenge: I dare you to make them last that long! Their irresistible taste and satisfying texture often lead to them disappearing much sooner. Whether you’re craving a wholesome breakfast addition, a midday pick-me-up, or a guilt-free dessert, these chocolate peanut butter energy bites are sure to become a cherished staple in your healthy eating routine. They are proof that nutritious food can be both simple to make and incredibly enjoyable.
Thank you for joining me in the kitchen today. I hope you give this recipe a try and fall in love with these energy bites as much as I have. Enjoy the rest of your week, and happy snacking!
Warmly,
A.

Chocolate and Peanut Butter Energy Bites
Ingredients
- 300 g smooth peanut butter
- 30 g cocoa powder
- 50 g coconut flour
- 75 ml maple syrup
- 1 teaspoon vanilla bean paste (optional)
Instructions
- In a medium-sized mixing bowl, combine all the ingredients: smooth peanut butter, cocoa powder, coconut flour, maple syrup, and vanilla bean paste (if using). Using a sturdy wooden or plastic spatula, thoroughly mix until all ingredients are well combined and form a consistent, slightly thick paste. Ensure there are no dry patches of flour or cocoa powder.
- Line a baking tray with parchment paper. Using a tablespoon measure (or your preferred size), scoop out portions of the mixture. Roll each portion between your palms to form small, uniform balls. Place the rolled energy bites onto the prepared baking tray. Once you’ve used all the paste and formed all your bites, transfer the tray to the refrigerator for approximately 30 minutes. This chilling period allows the bites to firm up, making them perfect for snacking. Enjoy your homemade, healthy treats!
Please note that all my recipes are developed and tested in metric grams. I recommend that you use digital scales for a more accurate results. I have provided a conversion to US customary in the recipe but please note that I haven’t tested using this method.
Notes
- You can substitute coconut flour for almond flour or almond meal for a different texture and flavor profile.
- Keep your energy bites in an airtight container in the fridge for up to 2 weeks for optimal freshness.
- For an extra flavor kick, try adding a pinch of sea salt to the mixture or rolling the finished bites in a sprinkle of desiccated coconut or finely chopped nuts.
