  • 1 small egg (beaten)

  • On a lightly floured surface, carefully roll out the pastry dough into a large circle, aiming for approximately 25-30 cm (10-12 inches) in diameter and 3-5mm (⅛-¼ inch) thick. Gently roll the dough around your rolling pin and transfer it onto the prepared baking tray. Prick the entire surface of the pastry with a fork to prevent bubbling. Spread the seasoned ricotta cheese evenly over the dough, ensuring you leave about a 5 cm (2 inch) border clear around the edge. Follow this by spreading the tomato chutney or jam over the ricotta layer.
