Pumpkin Scones with Cheese
Ingredients
- 150 g pumpkin or butternut squash flesh (cut into small pieces)
- 225 g self-rising flour (plus extra for dusting)
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon mustard powder
- ½ teaspoon ground cumin
- 55 g chilled butter (or vegan spread) (cubed)
- 100 g cheddar cheese (or vegan substitute) (finely grated)
- 60 ml warm almond milk (or any other milk) (plus extra for brushing)
Instructions
- Preheat your oven to 220°C (200°C fan) and place your baking sheet inside to heat up.
- Place the pumpkin pieces into a medium saucepan and cover them with water. Bring to a boil and simmer for 10 minutes, or until the pumpkin is just tender. Drain the water thoroughly and mash the pumpkin well with a fork. Set aside to cool completely.
- In a large bowl, sift together the self-rising flour, salt, baking powder, mustard powder, and ground cumin. Add the cubed, chilled butter and rub it into the dry ingredients with your fingertips until the mixture resembles fine breadcrumbs.
- Stir in two-thirds of the finely grated cheddar cheese into the flour mixture.
- Add the warm milk and the cooled pumpkin puree to the bowl. Using a dinner knife, quickly mix everything together until just combined. Gently bring the mixture together with your hands to form a smooth ball of dough, then place it onto a lightly floured surface. Avoid overworking the dough.

- Brush the tops of the scones with a little milk and sprinkle with the remaining grated cheese. Carefully remove the hot baking sheet from the oven and arrange the scones on it, ensuring they are spaced out. Bake for about 12-15 minutes, or until they are golden brown and cooked through.
