Naan Bread Pizza with Roasted Cauliflower

This is a great quicker alternative to making an ordinary pizza, perfect for lunch or dinner!

Ingredients

  • 1 teaspoon mild or hot curry powder
  • ¼ teaspoon ground cumin
  • ½ teaspoon ground turmeric
  • 1 ½ teaspoon salt
  • 2 tablespoon olive oil (plus extra for drizzling)
  • ½ medium cauliflower (cut into florets)
  • 4 small naan breads (can use pitta breads too)
  • 4 tablespoon tomato puree (or passata)
  • 8 mozzarella slices or vegan mozzarella slices (optional)
  • 1 small red onion (thinly sliced)
  • 1 small red chilli (thinly sliced)
  • 1 small green chilli (thinly sliced)

Instructions

  1. Pre-heat the oven to 200C (400F). Line a baking tray with baking paper.
  2. In a medium bowl, mix all the spices (curry powder, cumin, turmeric, salt) with 2 tablespoons of olive oil. Add the cauliflower florets and toss well to ensure they are evenly coated. Spread the seasoned cauliflower on the prepared baking tray and bake for approximately 20 minutes, or until the cauliflower is tender and golden brown with slightly crispy edges.
  3. While the cauliflower roasts, prepare your naan breads. Place them on a separate baking tray and spread each naan generously with tomato puree or passata. Once the cauliflower is ready, distribute it evenly over the naan bases. Top with mozzarella slices (if using), thinly sliced red onion, and both red and green chillies. Drizzle with a little extra olive oil for added flavor.
  4. Bake for another 15 minutes, or until the naan edges are crisp, the toppings are heated through, and the cheese (if using) is melted and bubbly.
  5. Serve immediately with your favorite yoghurt dip or any preferred sauce. Enjoy this quick, flavorful, and comforting naan bread pizza!
