Ingredients

  • 1-2 medium peaches
  • 100 g wild rocket salad (arugula)
  • 1 small red onion
  • 2-4 small breakfast radishes
  • 2 teaspoons fresh dill (chopped)
  • 2-4 small strawberries (optional, for extra sweetness and color)
  • Edible flowers for decorating (optional)
  • Balsamic vinegar to drizzle
  • Optional: Sunflower or pumpkin seeds for crunch

Instructions

  1. Cut peaches into halves, remove the pit, and then slice them into elegant wedges.
  2. Thinly slice the red onion. If using, prepare the radishes and strawberries by slicing them thinly as well.
  3. In a large bowl, gently combine all the sliced ingredients: peaches, rocket salad, red onion, radishes, and strawberries (if using).
  4. Top the salad with additional fresh dill. For an extra touch of beauty and flavor, scatter some edible flowers over the salad.
  5. Finish with a generous drizzle of high-quality balsamic vinegar. For added texture and nutrients, you can also sprinkle the salad with sunflower or pumpkin seeds before serving.

Please note that all my recipes are developed and tested using metric measurements (grams). For the most accurate and consistent results, I highly recommend using digital kitchen scales.
