Returning to the star of our show, the purple sweet potato, and how I decided to honor its majestic presence… I knew instinctively that I wanted to incorporate it into an ice cream-like dessert. My popsicle creation was entirely inspired by her ingenious culinary vision. I also had a generous stash of blueberries that needed to be used, so combining these two vibrant ingredients seemed like a stroke of genius. The resulting flavor profile, coupled with the breathtaking color, completely exceeded my expectations! These popsicles emerged from their molds incredibly smooth and wonderfully creamy, exactly the texture I had envisioned. They were beyond delicious – a solid “yummo” multiplied by a million! A Local Treasure: Finding Purple Sweet Potatoes Nearby

Just last week, during a visit to a garden center and farm shop near my workplace, I made an astonishing discovery: they sell purple sweet potatoes! I believe the joyful sound that escaped my lips upon seeing them might have startled the kind lady behind the till. More than likely, she now believes I have some rather serious eccentricities, especially given the little victory dance I performed as I exited the shop. But oh well, that’s a small price to pay for consistent access to these beautiful, healthy, and incredibly versatile gems. Blueberry Popsicles with Purple Sweet Potato

Ingredients

  • 1 cup purple sweet potato puree (boiled and cooled)
  • 1 cup fresh or frozen blueberries
  • 400 ml full-fat coconut milk (refrigerated overnight to separate cream)
  • ½ cup cashew milk (or other plant-based milk)
  • 3 tablespoons maple syrup (adjust to taste)
  • 1 teaspoon vanilla bean paste (optional, for extra flavor)

Instructions

  • Carefully scoop out the thick, solidified layer of coconut cream from the top of the refrigerated can and transfer it to a blender. Reserve the clear liquid for other uses or discard.
  • Add the purple sweet potato puree, blueberries, cashew milk, maple syrup, and optional vanilla bean paste to the blender with the coconut cream. Blend all ingredients until the mixture is perfectly smooth and creamy, with no lumps.
  • Pour the blended mixture into your chosen popsicle molds. Insert popsicle sticks and place the molds in the freezer. Refrigerate for approximately 2-3 hours, or until fully solid.
  • Once frozen, briefly run the molds under warm water to easily release the popsicles. Serve immediately and savor the delicious, vibrant flavor!

Please note that all my recipes are developed and tested in metric grams. I recommend that you use digital scales for more accurate results. I have provided a conversion to US customary in the recipe but please note that I haven’t tested using this method, so results may vary slightly.
