Spiced Apple and Pumpkin Hand Pies

Ingredients
- 2 medium cooking apples (peeled, cored, and cut into small pieces)
- 50 g golden caster sugar
- ½ cup pumpkin puree
- 1 teaspoon cinnamon
- 1 tablespoon maple syrup
- 1 tablespoon cornflour
- 2 sheets shortcrust pastry (320 g)
- 4 tablespoons milk of choice (e.g., almond milk for vegan)
- 50 g icing sugar (for topping, optional)
- 1 tablespoon white caster sugar (for sprinkling before baking)
Instructions
- Place the diced apples and golden caster sugar in a medium saucepan with 2 tablespoons of water. Cover with a lid and cook for about 5 minutes, or until the apples are soft but still hold their shape. Remove from heat and allow to cool slightly, then gently mix in the pumpkin puree and cinnamon.
- In a small separate bowl, whisk together the maple syrup and cornflour until smooth. Stir this mixture into the apple and pumpkin filling until well combined. This will help thicken the filling.
- Unroll your pastry sheets. Using a 10 cm round cookie cutter (or a preferred stencil like a pumpkin shape), cut out 12 identical circles. Spoon approximately one tablespoon of the apple and pumpkin filling onto the center of half of your pastry circles, ensuring you leave about a 1 cm border around the edge. Brush the edges of these filled pastry circles with your milk of choice.
- Carefully place a plain pastry disk on top of each filled circle. Gently press down around the edges to seal the pies. For a decorative touch and to ensure a tight seal, use the tines of a fork to crimp the edges. For pumpkin-shaped pies, make small indentations in the top and bottom of the pies to resemble the curves of a pumpkin. Poke a small steam hole in the top of each pie with a skewer. Brush the tops of all the pies generously with milk. Transfer the pies to a baking sheet lined with parchment paper and chill in the fridge for at least 30 minutes. This helps the pastry maintain its shape.
- Preheat your oven to 200°C (180°C fan/400°F). Bake the chilled pies for 20-25 minutes, or until the pastry is beautifully golden brown and puffed. Immediately after baking, sprinkle with the white caster sugar for a sweet, sparkling finish. Allow the pies to cool on a wire rack for at least 15 minutes before serving. Enjoy warm, perhaps with a scoop of vegan ice cream, a drizzle of caramel sauce, or a dollop of custard.
Please note that all my recipes are developed and tested in metric grams. I recommend that you use digital scales for more accurate results. I have provided a conversion to US customary in the recipe but please note that I haven’t tested using this method.
