Veggie Burger with Mustard Dressing
Ingredients
For the Burgers:
- 2 medium carrots (grated)
- 2 medium beetroots (cooked and grated)
- 1 ½ cups chickpeas (drained)
- 1 cup brown rice (cooked)
- handful of fresh parsley
- 1 tablespoon lemon juice
- 1 tablespoon yogurt
- 1 onion (minced)
- 2 cloves of garlic (minced)
- ½ teaspoon cumin
- ½ teaspoon curry
- ¼ teaspoon cayenne pepper
- ¼ teaspoon turmeric
- salt and pepper
- olive oil
For mustard dressing
- 3 tablespoon tahini sauce
- 1 tablespoon mustard
- 2 tablespoon lemon juice
- 1 tablespoon soy sauce (can also use tamari)
- salt and pepper
Instructions
Mustard Dressing:
- Blend all the ingredients together until smooth. Add a tiny amount of water if you prefer a more runny sauce consistency. Set aside in the fridge to chill.
Veggie Burgers:
- In a food processor, blend the chickpeas, fresh parsley, lemon juice, and yogurt until well combined but still slightly textured.
- Heat a large pan with a drizzle of olive oil. Sauté the minced garlic and onion for a couple of minutes until fragrant. Add the cooked brown rice and all the spices (cumin, curry, cayenne pepper, turmeric, salt, and pepper), cooking for another couple of minutes to toast the spices. Remove from heat and set aside to cool slightly.
- In a large bowl, combine the blended chickpea mixture with the sautéed rice and spice blend, grated carrot, and grated beetroot. Mix thoroughly with your hands to ensure all ingredients are evenly distributed.
- If the mixture feels too wet or sticky, incorporate a small amount of dry oats (either rolled or quick oats) a tablespoon at a time until the desired consistency for forming patties is achieved.
- Form the mixture into individual burger patties of your desired size and thickness. Place them on a baking tray lined with parchment paper.
- Bake in a preheated oven at 160°C (325°F) for approximately 8-10 minutes. Flip the burgers halfway through the baking time to ensure even cooking and browning on both sides.
- Serve the warm veggie burgers on a bed of fresh lettuce, generously drizzled with the prepared mustard dressing.
